Storing your vegetables and particularly leafy greens in a linen tea towel helps them stay fresh and last longer.  Wash greens thoroughly and drain to remove all the excess water but no need to pat dry.  Loosely wrapped in a clean damp linen tea towel and stored in the vegetable drawer in the fridge, your greens will stay fresh for weeks. After 5 days to a week, check the towel and if it has dried out, re wet it and return to the fridge drawer. It’s a great way to avoid single use or plastic storage bags and a linen tea towel provides a flexibly sized food storage pouch, perfect if you only have a handful of rocket or a large lettuce to store.
